Miracle noodles with vegetables | How to make this keto friendly Japanese delicacy
If you have been caught in the keto diet fad that shook the health buffs’ worlds in recent years, the term ‘miracle noodles’ may not be alien to you. The term refers to ‘shirataki noodles’ or konjac noodles – a Japanese delicacy of plant origin.
The white, semi-translucent noodles are made of an Asian plant called konjac yam (elephant yam). The noodles are made with 97% water and 3% konjac.
The thin, airy noodles, sometimes called ‘angel hair’ due to their appearance, are believed to be a great weight-loss food. They contain a starch called glucomannan – a water-soluble dietary fibre. This means the body does not break it down to use as energy, making konjac noodles an extremely low calorie food aka the miracle dish.
Here is an easy shirataki noodles recipe with vegetables. You can also add meat of your choice while sauteing to step it up.
250 gm Shirataki noodles
1 king oyster mushroom
1 onion (optional)
1 cup broccoli
1 cup French beans
4 cloves of garlic, crushed
Freshly ground black pepper
Salt to taste
Slice the vegetables into thin and long stripes
Rinse the shirataki noodles well
Cut them into smaller pieces
Heat up a skillet and place the noodles in it
Stir it at low heat for 3 minutes or until they are excess water is gone
Heat the olive oil in the same skillet
Saute the vegetables in it
Sprinkle in the ground pepper
When the vegetables become soft, add in the noodles
Saute them until the noodles are well blended with the vegetables
Your shirataki noodles with sauteed vegetables is ready to serve.
