Easy Crispy Keto French Fries (Just 3 Ingredients and Tastes like the Real Thing!)
Super crispy keto-friendly French fries that are just 3 ingredients and taste like the real thing. These fries are easy to make and can be fried, baked or cooked in an air fryer. The keto fries also stay crunchy for hours, even after they have cooled.
I’ve been on a mission to find a good low carb substitute for French fries. These fries have been my favorite recipe. They taste so much like regular French fries and they are easier to make than regular fries.
If you’ve missed having fries as a side dish for burgers, these keto fries definitely cure a craving. You can serve them plain or sprinkle them with salt before serving. Or try your favorite dipping sauce on the side.
They’re not vegetable fries, but instead made with three ingredients that combine to make a crispy French fry that has a texture that is a lot like the real thing.
How to Make Them
Combine the almond flour and xanthan gum in a medium bowl. Stir until evenly mixed. Add the hot water and immediately mix with a spatula until a dough forms. The almond flour should be completely incorporated into the dough. The dough should not be too sticky to touch.
Roll the dough out between two sheets of parchment paper until it is about 1/4 inch thick. Slice dough into 1/4 inch strips.
I’ve tested several ways to cook the fries using the stove, oven, or air fryer.
Ways to Cook Keto French Fries
I tested these by frying them, baking them in the oven and cooking them in the air fryer. All versions came out well.
Frying the fries takes the most work, but they come out all perfectly golden and look the best of the three cooking methods.
The air fryer is the fastest way to cook the fries. They come out mostly golden but the coloring is uneven. They do taste slightly drier than the deep fried version, but if you are dipping them in sauce you might not even notice.
Baking the fries will require the longest cooking time and the fries are paler in color. They taste very similar to the air-fried version. All you do is lay them on a prepared baking sheet and pop them in the oven.
How to Serve Them
I like these low carb fries plain but you can sprinkle salt and pepper over them while they’re hot. Or, try a seasoned salt for extra flavor.
Dipping sauces will also work. Try sugar-free ketchup or keto-friendly Ranch dressing, BBQ sauce, aioli, or mayo dip.

More Keto Side Dishes to Try
- 1/2 cup (55 g) superfine blanched almond flour
- 1 ½ tsp (5 g) xanthan gum
- 3 tbsp + 1 tsp (50 ml) hot water (see note)
In a medium bowl add almond flour and xanthan gum. Stir until evenly mixed. Pour in the hot water and immediately mix with a spatula until a dough forms. The almond flour should be completely incorporated into the dough. The dough should not be too sticky to touch.

Frying: Add enough oil to a medium saucepan until you have 1/2 inch of oil. Bring the oil to medium heat (about 350°F). Gently add in fries and cook until golden on both sides, this should only take a few minutes. Remove from oil and place onto a plate lined with a paper towel to drain excess oil.
Air Fryer: Place fries in a single layer in your air fryer, making sure none overlap. If desired, you can spray the surface of the fries with cooking oil spray. This is not essential to cooking the fries but it will help them have a more golden brown color. Set your air fryer to 400°F. Cook for about 5 minutes without preheat or until golden and crispy. Air fryer cooking time can vary a lot depending on the air fryer brand and some run hotter than others. I always recommend cooking a few minutes less than the recommended cooking time and increase as needed.
Oven: Preheat oven to 400°F. Place your fries on a baking sheet lined with parchment paper. If desired, spray fries with cooling oil spray (similar to the air fryer method, this is not essential to cooking the fries but it will help them have a more golden brown color). Bake for about 13 minutes or until lightly golden and crispy.
If desired, season fries with salt before serving. Serve while warm with your favorite dipping sauce.

- Make sure your water is very hot (too hot to touch) so that it will dissolve the xanthan gum.
- This recipe works best with almond flour. I did try a coconut flour version but did not like the results. See post for more details.
- I do not have a substitute for xanthan gum.
- I served mine with sugar-free ketchup. Other dip ideas include garlic aioli, spicy mayonnaise or marinara sauce.
- I did season mine with salt before serving but that is optional. I know some people prefer no salt on their fries. You can also add salt and other seasonings directly to the dough. I did one version with garlic powder.
